In It 4 the Long Run: Green Smoothie Popsicles

Finally, now you can have your green smoothie and eat it too!

Summer is winding down for sure, but the temps are totally still popsicle friendly. I whipped up some green smoothie pops for those days when you want a sweet treat but need your greens too.

These pops were inspired by one of Pyknic’s latest tee’s: “Avo-nly Got Eyes For You.” This tee immediately spoke to me, as an avid avocado eater/enthusiast/lover. Rather than stick to the basic (but always amazing) avocado toast recipe, I figured I’d embrace the season and get chilly on ya. This green avocado smoothie pops are a magical hybrid of dessert meets healthy green smoothie.

While avocados are mild tasting themselves, their incredibly creamy texture brings out the best in this green smoothie medley. The avocado along with the combo of banana, coconut milk and spinach creates a dreamy banana coconut flavored smoothie, that’s packed with extra nutrients from the spinach and avocado.

These two greens are subtle, yet pack a powerful nutritional profile. Spinach is loaded with vitamins A, B2, C and K and contains magnesium, manganese, folate, iron, calcium and potassium. Boom. Avocados, along with being a great source of healthy monounsaturated fat, contain more potassium than bananas and are loaded with fiber.

These healthy pops are perfect for an afternoon treat, a healthy dessert or you can even blend a couple up for a quick smoothie on the go.

Ingredients

Makes 4-6 Pops

1 Avocado (peeled and pitted)

2 Bananas

1/2 Cup of low-fat Coconut Cream

1 tablespoon unsweetened coconut flakes

1 cup of spinach

Place all ingredients into a blended and blend until completely smooth.
