It might be a bold move to share a margarita recipe on a Monday morning, but I think we’re all cool enough to handle it. Right guys? Plus, this way you can make sure you have all the ingredients on hand, so by the time Thursday’s 5pm happy hour rolls around you’re more than prepared.

If I’m not mistaken, I believe I’ve shared my love of margaritas with you before. What’s not to love? Salty, citrusy, tequilla-y – yeah margs are basically a signal to your tastebuds and brain that you’re going to have a good time or at least that some guac is on the way.

This recipe was inspired by 2 things. Number one: obviously when I saw this shirt I had to have it. I mean it has CACTI on it? Number two: when I was visiting home for vacation a few weeks ago I was strollin’ through the Stop & Shop with my mom and I stumbled across this micro-pineapple. Something inside me told me that I needed it. It was a visceral reaction. I felt like I was reverting back to my six-year-old self who would see a box of gummy sharks and grab them because “I neeeeeeeeded them.” So yeah, fast forward an hour and I was back at the house, a proud owner of a brand new micro-pineapple.

After I instagrammed him, I had a feeling he was ready for the big time. Ready to be on the blog. And thus the Pineapple Ginger Margarita was born. (I technically used other pineapple for the actual recipe, I couldn’t bear to cut him open, so alas he was a prop his whole life, but he did inspire a masterpiece.)

So if you’re looking to take your margarita drinking festivities to the next level (who isn’t?) might I suggest purchasing a micro-pineapple for decoration.

 

Pyknic Pineapple Ginger Margs

Ingredients
  • 1 Cup of fresh pineapple, chopped
  • ½ tsp of grated fresh ginger
  • 1 oz of triple sec
  • 2 oz of tequila
  • ½ lime, juiced
  • 1 cup of ice
Instructions
  1. Place all ingredients into blender and blend until smooth
  2. Serve in your favorite maragrita-drinking glass
