Today was historic. Not only was it an infamous #TacoTuesday but it also happened to be Cinco de Mayo. As far as tacos go, this was no day to half-ass it.
Tacos al Pastor was always the go-to taco but since we're no longer eating meat, there had to be another way. Today's creation featured seasoned & grilled portobello mushroom with grilled pineapple, avocado, homemade salsa, pickled red onion, and garnished with cilantro inside corn tortillas.
One day we're going to go on a "Taco Tour" both sampling tacos at various taquerías across this beautiful country and maybe even making some for those who come out to see us. I think this will particular taco definitely be on the menu.
